Canadian born Kelsey is the creative energy and flavour master behind Clever Kombucha. From a young age she has developed a culinary passion and is a self confessed health addicted foodie.
Alan is the man in charge of the all important number crunching and is available to lend a helping hand when it comes to any heavy lifting, maintenance or kombucha sampling.
Our master fermenter’s are really our SCOBY’s (Symbiotic Culture Of Bacteria and Yeast). They work hard night and day to ferment our tea and create an endless list of beneficial bacteria, vitamins, minerals and organic acids for you to benefit from.

We want to share a purposeful alternative to the mass produced and unhealthy fizzy drinks that saturate the market.
We use organic hand rolled whole leaf Assam tea produced by a co-operative of 6 small scale tea growers in India. They harvest the finest Assam tea and in turn are paid fairly helping to bring sustainability to their rural community.
Clever Kombucha is fermented in custom made oak barrels. Although labour intensive this results in a healthy kombucha with a depth of flavour that is impossible to replicate using the industry standard stainless steel fermenters.
Clever Kombucha is created by combining organic tea, organic cane sugar and a SCOBY (Symbiotic Culture Of Bacteria and Yeast). A SCOBY is the living home for the good bacteria and yeast that transform sweet tea into tangy fizzy kombucha.
Our kombucha is brewed with black tea creating a bold and complex flavour with notes of apple.
